Conventional eggs are laid by hens kept in a battery cage system with up to 4 hens in each cage and the cages stacked floor to ceiling. They are fed a ration that contains GMO grains, antibiotics (but no hormones as hormones are NOT Used in the chicken industry). They live in large buildings that have so much ammonia in the air that workers must wear haz-mat suits with breathing masks just to breath (the hens get no such protection). The ammonia is from all the chicken poop that is continually produced from the hundred thousand to 1 million hens in each building.

Organic eggs are laid by hens that under USDA regulations cannot be caged and must have daily access to the out of doors. They are fed a certified organic grain ration that will not contain any drugs or GMO grains. Because they are not allowed to be caged, all certified organic eggs come from free range chickens. Because the hens are free ranged there are far fewer birds per building which means healthier birds and healthier hens lay healthier eggs.

Going beyond organic chickens are the pastured chickens which may or may not be fed organic grain and may or may not be certified organic. these are birds that are basically raised outdoors on green healthy pasture. they eat pasture plants, insects, small rodents and get a lot of sunshine. they also are allowed to form natural social groups and a pecking order (especially if there is a rooster in the flock) which makes for happier birds. happy birds on a good diet are amazingly healthy so have no need for any drugs and they lay eggs that are nutrient dense and have the perfect ratio of omega 3 to omega 6 fatty acids. this egg cannot be found at grocery stores (with the exception of locally owned small health food stores and co-ops)

In theory it means that the chickens are raised totally on natural foods that have no pesticides or herbicides, and they haven't been treated with any antibiotics. True organic is really hard to find unless you know the farmer personally. It is actually impossible to be truly organic, and feed the maw of America.

In practice, a lot of companies play kind of fast and loose with the "organic" label, as it gives them an excuse to jack up the price and sell stuff to urban yuppies.

You'll also see free range with organic. Meaning that the poor chickens aren't in cages just shooting out eggs. So they aren't getting pumped full of drugs and they get to stretch their legs a bit.
