The advice to look at the CUK (Coeliac UK) website is good, or Celiac.com if you are in the US.

C(o)eliac Disease is an autoimmune condition, not a true allergy, so you will not go into anaphylactic shock as a result of it.

If you don't go onto a gluten-free diet at all, then you will continue to damage your gut, and will not absorb food properly. This can lead to cancer (because of the continual damage to your gut) and malabsorption conditions such as osteoporosis, as well as ongoing fatigue and stomach upsets. You can also develop dermatitis herpetiformis - an extremely itchy skin condition.

If you go mostly gluten-free, but then eat the occasional item with gluten in, then you may find that your reaction is more acute - stomach pains and bad diarrhoea are common (although some people don't react at all). The occasional accidental glutening doesn't do any long term harm, but continual exposure can lead to the problems I listed above.

Basically, if you've been diagnosed C(o)eliac it is definitely in your best interests to go on a gluten-free diet. This can be difficult to start with, and it's not uncommon for people to go through a period of 'mourning'. However once you get used to it it really isn't that bad, and you will feel so much fitter (even if you haven't had bad symptoms already). If you are feeling unsure about what you can eat, ask for an appointment with a dietician (this should be automatic anyway).

My mum has it so I know a lot about it. You've obviously just been diagnosed but what you don't realise is that there are loads of things that are gluten/wheat free and that taste nice. You can buy pizza's and all sorts that are gluten-free and you get use to it as well. If you carry on to eat wheat/gluten the effects will not be immediate but it can cause all sorts of things in late life because it affects your small-intestine (.?) which is obviously used for digestion. It is a good idea to consult your doctor and he can give you more advice but when you start a gluten-free diet it is a good idea to keep to it because it makes you sick if you don't.Health Question & Answer

If you carry on eating the foods, you're just never going to know what it's like to feel really well. There may be a chance for more serious medical problems later in life, but I'd consult your doctor about weighing the benefits if you really don't think you can do the gluten free diet. Now, if you do succeed with the diet, you're going to feel REALLY GREAT. You won't believe how you went so long feeling so "blah". But if you manage the diet for a while and then slip up, you'll feel REALLY sick, even if you only have a little bit of gluten. Diarrhea mostly. But it'll suck.Health Question & Answer

coeliac, you were close lol
it depends on how severe your allergy is, some people just get a headache from it, but if your allergy is severe you could go into anaphylactic shock, this often causes the heart to stop and of course death.
if your allergy is mild you must remember that prolonged exposure can either make it worse or cure it, but you wont know which till it happens so i would advise not testing it as you could make it worse and go into shockHealth Question & Answer
