Question: Does microwaving something a really long time kill all bacteria.?
So my roommate let chicken thaw all day on the counter, out of the package, until blood was dripping from it. Then he grilled it. Then he let it sit for a couple of hours on the counter until I finally got back and put it in the fridge. It might offend him if I do not eat the chicken that he grilled for me, but I do not want to get sick. Does anyone know, and I mean "know" not "have a theory" whether, if I put this in the microwave for like 20 minutes, will it kill all the salmonella etc that has been growing all day.?Health Question & Answer

I actually just studied bacteria growth in my food sanitation class, so I'd like to say I "know" the answer, lol.

Your roommate made a couple of mistakes here. First of all, you should NEVER thaw chicken at room temperature. You can either thaw it in the refrigerator (which can take a long time), thaw it in cold water for a few hours, or thaw it in the microwave (ONLY if you are going to cook it right away though, not the most recommended method). Raw chicken left on the counter for a few hours has been time-temperature abused BIG TIME. There probably is bacteria growing at that point. Then he grilled it and left it out AGAIN, which further time-temperature abused it, so MORE bacteria could have grown. You can't microwave it for 20 minutes. It'll be insanely dry and inedible by then. I'd say avoid eating it at this point. Health Question & Answer

Microwave is fine. I cook ALL my raw meat in the microwave. I eat a good 10-15 pounds of chicken a week I cook in the microwave. I also cook buffalo burgers in there and raw fish. Never had any problems. As you can see I am not the best cook in the world. Raw Chicken Generally takes about 5 min to cook in the microwave for me. 2.5 min then flip it over then cook another 2.5. The bacteria on meat, other than hamburger that is ground up, lies on the surface of the meat. Pork is an exception.

This is why rare steaks are O.K. to eat, if they are grilled for a few minutes to kill the bacteria on the outer surface of the meat. One of the primary functions of having good stomach acid content is to kill bacteria from our food.

Microwave ovens alter the proteins in meat and should never be eaten after being in a microwave oven.

The real danger with "old" meat is botulism. This is one of the most lethal and toxic bacteria known to man and you can get this from "old" meat.

Most chicken sold in stores have salmonella bacteria on it. You need to clean it well and then make sure it is cooked well if it is a whole chicken especially because the interior surface of the chicken is still an "outer" surface even though it is inside the chicken. Same reasoning with Turkey you make for Thanksgiving.
