The question that you need to ask is - what are you using it for.?
Typically the shake is always going to be better because you control what is going into the mix whereas most all bars - even EAS, Labrada, and P90X - although have quality proteins, also have a substantial amount of sugar.
Meal Replacement:
Shake: If you make it before hand, drink within 4 hours. Can blend in fruit, peanut butter, almonds, etc...
Bars: Are very convenient to have on the go, especially for the unexpected side trip that would have caused you to miss a meal.
Pre/ Post-workout:
Stick with a shake here, even if you can't premix just use the powder and water then eat a banana on the side. Remember that this "meal" is for functionality, not for pleasure.
