Answers:
HMMM.? Stress. Sounds like a possible stomach problem like acid reflux, or indigestion from the night meal. Since you know you will get hungry at midnight, eat a light snack an hour before midnight, I find that string cheese is good for this. If you come to midnight and you are still hungry this then is not hunger it is something else, possibly thirst.

Sometimes our bodies accustom themselves to certain eating times so they have to be retrained somehow. A way to do this is to choose not to eat that late. Doing this for several weeks will tell your stomach to not be hungry. Then it won't.

I also suggest eating more smaller meals during the day to compensate for you long day. Three big meals +snack at the wrong time can really screw with the digestive track. Health Question & Answer

Have you ever considered it to be a signal from your body telling you you're malnourished.? Try this: Next time you're hungry, eat a big meal of hearty foods instead of light foods or junk. I'm talkin' potatoes and steak. or spegetti... Or hot ham and cheese... Or pancakes... Something that will fill you and give you lasting energy. And also exercise on a regular basis, if even just slightly.Health Question & Answer
