How quickly do you get sick from ingesting raw meat?!


Question: How quickly do you get sick from ingesting raw meat.?
My science project is on food poisoning, and I'm wondering how quickly symptoms would set in after ingesting uncooked hamburger meat. Just a rough estimate will do. Thanks.Health Question & Answer

It depends on what the agent of disease was.

E Coli, which is usually what we are concerned with in meat takes 2-8 days, with an average of 3-4 days.

Then you have the stomach flu, which is the norovirus, which takes 24-48 hours.

Salmonella takes 6-72 hours, usually though its 12-24 hours.

it totally depends on WHICH germ your talking about.

Staph aureus food poisoning would have an onset of 4 hours.

Bacillus cereus food poisoning is about the quickest -- about 2 hours after ingestion, vomiting and diarrhea begin. But I'm not aware of any published outbreaks of B. cereus from hamburger -- it is more classically associated with fried rice dishes.

E. coli 0157 is perhaps the most deadly germ I can think of that would most certainly come from ingestion of infected raw meat. Incubation is much longer -- 1 to 10 days.

First of all you are assuming you would get sick from injesting uncooked hamburger meat. That is not necessarily true. If the meat is kept at proper temperatures many gormets use ground tenderloin of beef to make Steak Tar Tar which is a delicacy using spices and raw eggs mixed with the meat and served on a bed of fresh lettuce and we don't get the least bit ill.
OTOH if you serve "not cooked enough pork, then you can expect to get sick within about two hours of ingestion.Health Question & Answer

made a nice meal using meat that was bought & taken home within 5 mins of buying, straight into the freezer, then taken out of freezer & defrosted & cooked straight away, but still got sick from it even tho it was thoroughly cooked, & me, my hubby & my Dad ate the same meal but i was sick the most, my dad only had a bit of a sore tummy the next day, my hubby had minor cramps the next day & a funny feeling in his tummy late that night, but within 2-3 hrs i started getting cramps & then sharp pains in my stomach, & it got worse from there, had to go to the Dr's the next day to get medication, i was so sick!
