Many of the classic Chinese herbal books are available in English. The largest selection I have seen is at Redwing Books, and I have provided their website below.

The Yellow Emperor's Classic, or Huang Di Nei Jing Su Wen, is an ancient text and a pivotal book to read about Chinese herbal medicine. It is written as a dialogue between the emperor and his minister. I would recommend starting there for an enjoyable, informative read.

I can recommend two other books that have been translated into English. The Spiritual Pivot, or the Ling Shu, is considered an important medical text. The Divine Farmer's Materia Medica, the Shen Nong Ben Cao, provides a lot of historical information and is said to be the oldest record of Chinese medicinals.

You can find a lot of information about Chinese herbs, such as how they are prepared (fried, raw, charred, etc), but first you have to have an understanding of the theoretical framework for Chinese medicine for it to be useful or meaningful. By the way, the Chinese herbal pharmacopeia is not limited to plants. Some minerals, insects and animal parts are included, too. Some Chinese herbs are toxic, so it is important to have a qualified professional diagnose and prescribe formulae for you.
